My all-time favourites are almojabanas. There used to be (maybe still is) a dairy along the back road from Bogotá to Cota and they used to serve the most heavenly almojabanas. A bit further along where the back road met the main road at Chía they served, beside the road, the fabulous deep fried chicharón and, across the way, the favourite place for Sunday lunch that served fabulous fried chicken. The only problem there, was the amount of Colombiana that got spilt on the tables and attracted flies - we used to call it the "carne con moscas" place.
¿Why no mention of the other cheesy bread delight - buñuelos?

Erica, I really appreciate the work you put into this site. My wife is from Bogota and we lived in Bucaramanga for a bit... Colombian food is in my heart and now in my stomach too!
I've noticed when I am trying to fake double cream arepas with USA ingredients that Mexican table cream mixed with questions fresco can add that natural sourness that Colombian milk has. You might want to look into it for alamojabanas? I am also excited that our market now has boxed milk, some of the same brands found in Colombia - huge difference in coffee and I am wondering if quesito would come out better with boxed milk. Cheese is the trickiest part for all these recipes! We need a cheese guide, jajaja. -jake

I’ve searched everywhere and can not find Colombian Pan de Salchicha ! Do you have a recipe? I know it’s similar to Pan De Blandito but with a slightly less chewy texture and shiny exterior.
