Beef Tacos with Avocado Sauce (Tacos de Carne con Salsa de Aguacate)
Ingredients
- 1 pound flank steak trimmed
- ½ teaspoon ground cumin
- 2 garlic cloves minced
- 1 scallion finely chopped
- 1 tablespoon olive oil
- Salt and Pepper
- ½ teaspoon paprika
- 8 tortillas corn or flour to serve
Avocado Sauce
- 2 ripe avocados peeled and pitted
- ¼ cup white onion chopped
- 1 tablespoon olive oil
- ¼ cup fresh cilantro chopped
- 1 garlic clove
- ½ teaspoon ground cumin
- Juice 1 lime
- ¼ cup sour cream
To serve:
- 1 medium tomato diced
- 2 tablespoon finely chopped red onion
- ½ teaspoon Tabasco sauce
- Juice 1 lime
- Salt and Pepper
- ⅓ cup chopped fresh cilantro
Instructions
To make the steak
- Place the flank steak in a zip lock bag then add the garlic, cumin, scallion, olive oil, paprika, salt and pepper. Marinade for at least 1 hour or overnight.
- Remove steak from marinade bag and remove as much of the marinade as possible. Discard remaining marinade. Place the steak on the preheated grill and cook 5 minutes on each side for medium doneness or cook until desired degree of doneness.
- Remove from grill and allow the steak to rest for 10 minutes. Slice the steak against the grain and set aside.
Avocado Sauce
- Place all the ingredients for the sauce in a food processor and process until smooth. Transfer to a serving bowl.
- Combine the rest of ingredients in a bowl to make a tomatao salsa.
- To Serve: Let everyone assemble their own tacos with steak, avocado sauce and tomato salsa

I love Mexican food and the flavors that they use in their cuisine are amazing to me. Tacos are such a versatile food, as you can use any kind of filling. If made right, they are absolutely delicious. For these beef tacos I used flank steak, but feel free to use your favorite kind of steak.

Erica, I have e mailed you several times indicating how pleased I am to have found your blog. I've noticed that lately you are posting "recetas" that have been posted before and while I don't think there is nothing wrong with it, I was wondering if you were running out of recipes to share with your suscribers....If that is the case, I'd gladly send you what I have in my folders as I have been collecting recipes for the past 20 years. Of course I don't want to mass mail recipes for the sake of sending them. I have broken them down by nationality and/or type pf meal...i.e, appetizers, desserts, poultry, beef, etc.

BTW, I have several books of Recetas Colombianas and while many of them I am not familiar with, I was wondering if we could start a CCC "Cocina Colombian Club" and share them with other people. I know you have many subscribers to your blog from Colombia...perhaps we could start a dialogue... what do you think? Another topic would be the type of ingredients used in Colombia. I am planning to visit Colombia for a couple of months and would love to surprise friends and family by recreating some of your recipies...my only problem is that I am not familiar with type of seasonings and/or name of creams (heavy, whipping, etc) If you think there is merit to these ideas, let me know and I'll be glad to participate....

Tengo varias recetas Colombianas para publicar pero el trabajo que tengo que hacer con cada plato que publico toma mucho tiempo por que yo tomo mis propias fotos y tengo que escribir cada post.. Pero me encanta tener nuevas alternativas. Yo te dejo saber cuando me puedes enviar algunas recetas. En mi pagina de facebook puedes empezar algun forum con ingredientes Colombianos si quieres.
En este momento yo estoy un poco ocupada con este blog, pero estoy dispuesta a colaborar. Si tienes alguna pregunta sobre los ingredientes solo dejame un comentario y yo trato de responder lo mas pronto posible. La idea de esta pagina es ensenar a personas de todos los paises a cocinar comida Colombiana y por eso es que utilizo ingredientes que se encuentran en USA y por eso es en ingles, para el futuro quiero hacer una pagina en espanol, pero eso toma tiempo. Ummm, me too! I had a salad for lunch the other day with a cilantro avocado dressing, and I wanted to push the salad away and drink the dressing! LOL
