Sopa de Lentejas con Costilla de Cerdo(Lentil Soup with Pork Ribs)
Ingredients
- 2 pounds pork ribs cut into pieces
- ¾ cup aliuños
- 6 ½ cups water
- ½ cup dried lentils
- 1 large carrot peeled and diced
- Salt and pepper
- 1 large potato peeled and diced
- ¼ cup fresh cilantro
Instructions
- In a large pot over medium heat, add the lentils, water, aliuños, carrots, and pork ribs. Slightly cover and simmer for 45 minutes.
- Add the potatoes. Simmer for 15 to 20 minutes more or until the lentils become tender but not mushy.
- Season with salt and pepper. Add fresh cilantro and serve with white rice, sweet plantains, salad, and hogao on the side.
As you know, I love soups, and while growing up in Colombia, there were delicious soups made daily at our house.
There are those simple dishes that you want to make because you need comfort food and because it reminds you of what your mom or grandmother used to make when you were a kid. Soups are that kind of food for me. I love to serve this soup with white rice, sweet plantains, and a tomato-red onion salad on the side.

I just found your website. I can't tell you how excited I am because I am Colombian descent and my husband is a native Colombian. Unfortunately, I do not really know how to cook all the meals he loves and I don't eat any meat other than chicken. Our mom's recipes don't actually have any measurements so this is very special. You have inspired me to try cooking some of these meal for him.
Can you tell me if these can be made in a slow cooker? We have kids and crazy schedules so I want to try using the slow cooker more to have dinner ready earlier rather than cooking last minute.

Adriana- Thank you for your comment and I didn't make in the slow cooker, but you can do it, just use less water or stock and the cooking time will be longer.

I made this soup for some Colombian friends. I followed the recipe as best as I could. I have a tendency to add my own touches when I cook, so i added a half can of tomato paste because I wanted a little color to the broth. That little bit of paste added some rich flavor as well. My friends raved about it. They want me to make it for them every time they visit. I enjoy your blog and have made several of your recipes.
