Roasted Salmon with Pineapple Salsa
Ingredients
- 4 salmon fillets
- 1 tablespoon olive oil
- 1 tablespoon ground cumin
- Salt and pepper
- 2 cups peeled cored and diced fresh pineapple
- Juice of 1 lime
- 1 tablespoon chopped fresh mint
- 3 tablespoons chopped fresh cilantro
- ½ jalapeuño seeded and minced
- Salt and pepper
Instructions
- Preheat the oven to 450°F.
- Put the salmon fillets, skin side down, on a foil-lined baking sheet. Drizzle olive oil and season with cumin, salt and pepper.
- Roast until the fillets are almost opaque throughout, about 20 minutes.
- eanwhile make the salsa: In a bowl, stir together the pineapple, lime juice, mint, cilantro and jalapeuño. Cover the salsa and refrigerate until ready to serve.

I used salmon this time, but you can use cod, tilapia, or swordfish.

This dish looks really flavorful and lovely. I like your suggestions for alternative fish, depending on what is at hand. I wonder, too, about alternate fruit? Pineapple is very tasty but does not agree with me at all (allergy--I get hives.) What about grilled peaches or perhaps apricots? That might taste good.

This recipe was so simple and so delicious!! I even skipped the mint, cilantro and jalapeno in the salsa and added mango and red pepper instead. I also topped the salmon with some of the salsa as it cooked. So it roasted the salsa with the salmon. Delish!! My husband said to add this recipe to the rotation:)
